Owners Michael and Lynn Freeman brought the Jimboy’s Tacos concept to Aliso Viejo all the way from Northern California, where it has been a local favorite for over 60 years. We spoke with Southern California Area Representatives and owners, Michael and Lynn Freeman, to learn more about this appetizing establishment.
The original Jimboy, Jim Knudson founded the company in 1954 out of a trailer in Kings Beach, Lake Tahoe. In 1965, Knudson began franchising Jimboy’s Tacos and growth skyrocketed. The company now has approximately 40 locations, most of which are located in Northern California. But thanks to Michael and Lynn, Southern California residents will now have the opportunity to experience the taste of Jimboy’s.
Some might call Michael a taco expert – for the last five years, he has dedicated himself to the Jimboy’s North America Corporation, based in Folsom, California. His wife, Lynn had built a successful 26-year career as a hairstylist and salon owner in Sacramento. So how did these Northern California natives end up in Orange County? It was simple – a craving for that signature grilled parmesan dusted taco shell!
While on vacation in Southern California, the couple did what any Southern California tourist would do; visit Disneyland! While they spent the day exploring the happiest place on earth, Michael and Lynn could not shake the craving for those one-of-a-kind tacos. And just like that, an idea was born. The couple began researching Orange County and while they loved the area, something was missing. It was then that Michael and Lynn discovered what they refer to as the “Gem of the OC” and what we know as Aliso Viejo. It was a community they had always imagined raising their daughter in. And it was the perfect location for Southern California’s first Jimboy’s Tacos.
On September 13, 2015 Michael and Lynn opened Jimboy’s doors, delighting the taste buds of residents throughout Orange County. The couple pride themselves on providing the same distinct and unique cooking that made Jimboy’s popular since it’s beginning in 1965. The Freemans are dedicated to serving up flavorsome food made from real, quality ingredients always made fresh and in small batches to ensure the tastiest flavor. As Southern California Area Representatives, the couple plan to establish the Jimboy’s brand throughout Orange County as well as the rest of Southern California. And they couldn’t be more thankful for all the support they have received over the past year. Lynn shared, “Mike and I would like to thank the city of Aliso Viejo and surrounding sister cities for the wonderful support and for helping us to realize our dreams of expanding the Jimboy’s Tacos family!” We speak for the entire town of Aliso Viejo when we say, we are happy to have you as a neighbor.
